Hot sauce, wine and food pairings

Recently was asked on twitter what wine is good with the spicy stuff?? I heard it's hard to drink wine with spicy dishes. curious. Hot sauce is alot like wine. Different sauces work with different dishes. I would pair light fruity sauces with white wine and fish. Heavier red sauces with a full body red and beef. Mid body and sweet sauces with pork and either red or white table wine.  Alcohol does tend to make hot sauce seems hotter but heat level is a personal preference. We have experimented making shots with hot sauce and for sure the heat was...

Increasing your intake of chillies and spicy foods could lower your risk of a premature death, a new study has found.

"Eating spicy food can lower risk of early death" A new study has found eating chillies and spicy foods is linked to a longer life. The study, conducted in China and published in the British Medical Journal, collated dietary data from almost 500,000 participants over seven years. The results concluded that people who ate spicy or hot food once or twice a week, had a 10 per cent reduced risk of death during that period. It also found that where there was an increase in chilli intake from three to seven days a week, there was a 14 per cent reduced risk...

Culley's... The Newest Member of the HSW Family

We met Culley's at the New York hot sauce expo. They are from New Zealand and when we tasted their sauces we knew we had to buy as much as we could get while we were there. The other night I had a chance to sit down and try all these sauces again but with food this time.  These sauces are some of my favorites and a couple of them are also the hottest we have at Hot Sauce Willie's. The Culley's Reaper Sauce is not for the faint of heart. It has a lot of flavor and some sweetness but it...

For the Love of Hot Sauce

When I was growing up in Brooklyn – my father always grew hot chilies in our backyard garden. I would watch him eat them raw, dipping them into a small plate of salt. As I grew up I didn’t have the same passion for the very spicy. I tried hot sauces like Tabasco and other widely known sauces, but never liked the flavor they brought to food. That all changed when I went to New Orleans and was exposed to some of the most amazing food I had ever eaten. What was even better were the hot sauces. They not only packed heat,...

Hickory smoked ribs and saaaauuuceeeeee!

If you didn’t know, I own 2 smokers in my backyard. I take BBQ seriously! For lunch today I decided to break out some ribs that I smoked and seasoned with Heartbreaking Dawns Memphis Belle BBQ Rub. To complete my meal I decided to get bitten by High River’s Rattler BBQ sauce. It was just what I needed! It has the savory sweetness that a good bbq sauce it known for with a spicy bite at the end. No need to suck out the poison on this one, it’s allllll good!

Eating Some Bird with Aaron of Hot Sauce Willies

So I decided to rock some cornish hens roasting them with corn bread stuffing, roasted veggies and potatoes. I love this dish cause you get to slap it all together in a single tray, throw it in the oven and in a hour or so your good to go. Meals like this are very holiday-esk. Traditional for those winter months where a warm stuffed bird brings memories of family gatherings or reminisce of ripping open some sort of present. Alongside of this style of dinner would be the traditional cranberry sauce. So with this meal I had to bring it...
